I hope your Wednesday is off to a great start and that your week is going appropriately fast. 😉 Babysitting has been going pretty well, and I spent the afternoon at the neighbors’ pool with the kids yesterday, so the week has been going swimmingly (pun intended) so far!
So, because I did a Red, White, and Blue Recipe Roundup last week, I didn’t get a chance to share my weekly eats with you all. This week’s WIAW is going to be a mix of my favorite meals from the last two weeks, because some of them are just too good to pass up sharing. 🙂
Head on over to Jenn’s site for more WIAW fun!
Lots and lots of Greek yogurt. And now that berries are in season, I’ve been heaping them into my yogurt bowls!
These have been kind of random what with the holiday weekend and babysitting, but here are some of my favorites:
A bowl of cooked quinoa topped with some pasta sauce and pesto. YUM.
This egg-free frittata is so good and filling that it has often graced my lunch-time plate. Yep, I’m going to tease you once more with just the picture before I share the recipe next Monday. 😉
Last week, my mom and I were walking around Target (danger, danger! Never go to Target without specific items in mind…) and she picked up a bag of trail mix. It, of course, had lots of nuts in it, and I was lamenting and wishing that I could find a healthy, quick snack like that. I looked a little bit further down that same aisle, and voila, I found this Enjoy Life Mountain Mambo mix.
I. Love. It. I was beyond thrilled to see that this mix was free from everything except those few ingredients you see listed above. That means free from nuts, eggs, dairy, and gluten, as well as corn and soy. And guess what? It tasted amazing as well! It really is so cool to see how good plain ol’ nature can taste. (Ok, that was cheesy, but do you know what I mean?)
As I mentioned on Monday, we went to a family BBQ on Saturday, and I brought along these little babies. Snack size (one bite!), healthy, and quick. Oh, and delicious.
Dinners, like lunches, have been kind of all over the place. I actually haven’t taken pictures of too many of them, but here is one that I particularly loved. Salmon, brown rice/quinoa blend, strawberries, and broccoli!
Full of the flavors and freshness of summer!
This next meal was actually what we had on the 4th; Picante Peach Chicken. It’s one of my favorite recipes by Campbell’s Kitchen, but, um…people shouldn’t let me near a grill. Seriously. You can’t tell from this picture (or maybe you can), but I burned the living daylights out of this chicken. It was embarrassing and not very good. Think hockey puck-texture. But no one complained, and I think we were all able to chip off the black parts and eat the rest. Annnnnyyyyway, the recipe is a great one!
I also made these little beauties for the BBQ. They’re s’mores bars, and I’ll post the recipe soon!
They went quick as a flash at our party. Success!
On the 4th, in honor of the holiday, I made Apple Crumble (from this recipe). I was thinking apple pie/Americana (not autumn) when I made it, if you’re wondering. 🙂

In other news, today, like it was last week, is basically my “Friday.” The family I babysit for doesn’t need me tomorrow or Friday, so I have both days off. Unfortunately, tomorrow is also my Great Aunt Grace’s funeral. I didn’t know her too well, but based on the times I met her in person, the stories I’ve heard about her, and the Facebook contact we had (yep, an 88 year old on Facebook…love it), she seemed like such a sweet lady.
I don’t really have too much to chat about (see my post from Monday for more of that sort of thing), so I’m off! Have a great day!
Have an awesome day! The food looks amazing! 🙂 I’m craving strawberries now and they are not in season down here. I’ll have to see if I can find a punet next time I’m at the store or maybe even some frozen ones.
all your food looks amazing and i am especially jealous of the pool 🙂
I want that pool! 😀 It doesn’t help that I have yet to swim in my pool at home yet because the weather stinks whenever I am home for the weekend 😦
That’s great to hear that your babysitting is going well. And that you’ve been enjoying some awesome eats! Especially that enjoy life granola. It just sounds so good.
Sorry to hear about your Great Aunt. I had a Great Uncle die recently as well (I think the funeral is today and the calling hours were yesterday). I can relate to knowing mine very well either, but that’s so awesome that you were able to communicate with your Aunt Grace on Facebook, especially at her age! My Uncle Charlie was a few years younger I think (maybe 82? Not sure exactly) but I’m pretty positive he didn’t have a Facebook. Haha.
Sorry about your great-aunt, even though you didn’t know her that well. Sending love to you and your family!
Also, those s’mores bars look fantastic and yummy 🙂
Love the quinoa with pesto/tomato and the desserts! Yum!
Those little skewers are so cute and colorful and fresh mozzarella is SO good!
I never thought to sub quinoa for pasta with my spaghetti sauce! That’s such a great idea.
Aw, I’m sorry to hear about your auntie. It sounds like she had a really wonderful, long life, though 🙂
today basically your friday? how sweet!
EVERYTHING looks amazing! I especially love how delicious and balanced that salmon/rice/strawberries/broccoli dinner is. And even though I don’t eat chicken, I must say that peach chicken sounds pretty fantastic. I was always a fan of fruity chicken dishes!
Can’t wait to hear more about those S’mores bars!
wow, all your eats look fantastic! making me hungry! glad you got a few extra days off- enjoy!
Seriously, Liv, everything looks so so good. Caprese salad is one of my favs, I fell in love with it when I was on holiday in Italy in my early teens. I’m loving the idea of quinoa with pasta sauce and pesto, can you say yum? Yum!
Can’t wait for the s’more bars recipe! they look insanely good!
The quinoa with pasta and pesto looks amazing!
Dang, that pool is ridiculous! I wanna come swimming 🙂
The quinoa dish with tomato sauce and pesto looks great! I would have never thought to use it as sort of a pasta dish. Can’t wait to try it 🙂
Looks delicious (especially that frittata!!) And I love EnJoy Life products they always make it easy to find a treat at the store, I haven’t seen that trail mix before though I’ll have to look out for it 🙂
[…] first of all makes the day seem to go quicker, and second is just plain old amazing. Seriously, that pool. I […]
All of your eats look really fabulous. I love the quinoa with marinara and pesto on top. I bet there was so much flavor in every single bite. I also love your Caprese skewers. The flavors of summer (and nature – yes, totally cheesy, but apt) are wonderful. I’m making a Caprese salad tonight and I’ll dust it with a crack of sea salt and black pepper and then sprinkle a little balsamic over the whole thing. It’s always so good. I think an Apple Crumble is perfect for Americana (I did the same thing), and I can’t wait to see the eggless frittata. I hope you enjoyed your extra days off.
I like cheesy (foods and thoughts!). But you’re so right, Caprese is the ultimate combination of summery and nature flavors. Yum. I didn’t even think to put sea salt and pepper on mine! I topped the skewers with balsamic the day I served them, which just put them over the top. So good.
