I hope your Wednesday is off to a great start and that your week is going appropriately fast. 😉 Babysitting has been going pretty well, and I spent the afternoon at the neighbors’ pool with the kids yesterday, so the week has been going swimmingly (pun intended) so far!
So, because I did a Red, White, and Blue Recipe Roundup last week, I didn’t get a chance to share my weekly eats with you all. This week’s WIAW is going to be a mix of my favorite meals from the last two weeks, because some of them are just too good to pass up sharing. 🙂

Lots and lots of Greek yogurt. And now that berries are in season, I’ve been heaping them into my yogurt bowls!
These have been kind of random what with the holiday weekend and babysitting, but here are some of my favorites:
A bowl of cooked quinoa topped with some pasta sauce and pesto. YUM.
This egg-free frittata is so good and filling that it has often graced my lunch-time plate. Yep, I’m going to tease you once more with just the picture before I share the recipe next Monday. 😉
Last week, my mom and I were walking around Target (danger, danger! Never go to Target without specific items in mind…) and she picked up a bag of trail mix. It, of course, had lots of nuts in it, and I was lamenting and wishing that I could find a healthy, quick snack like that. I looked a little bit further down that same aisle, and voila, I found this Enjoy Life Mountain Mambo mix.
I. Love. It. I was beyond thrilled to see that this mix was free from everything except those few ingredients you see listed above. That means free from nuts, eggs, dairy, and gluten, as well as corn and soy. And guess what? It tasted amazing as well! It really is so cool to see how good plain ol’ nature can taste. (Ok, that was cheesy, but do you know what I mean?)
As I mentioned on Monday, we went to a family BBQ on Saturday, and I brought along these little babies. Snack size (one bite!), healthy, and quick. Oh, and delicious.
Dinners, like lunches, have been kind of all over the place. I actually haven’t taken pictures of too many of them, but here is one that I particularly loved. Salmon, brown rice/quinoa blend, strawberries, and broccoli!

This next meal was actually what we had on the 4th; Picante Peach Chicken. It’s one of my favorite recipes by Campbell’s Kitchen, but, um…people shouldn’t let me near a grill. Seriously. You can’t tell from this picture (or maybe you can), but I burned the living daylights out of this chicken. It was embarrassing and not very good. Think hockey puck-texture. But no one complained, and I think we were all able to chip off the black parts and eat the rest. Annnnnyyyyway, the recipe is a great one!
I also made these little beauties for the BBQ. They’re s’mores bars, and I’ll post the recipe soon!
They went quick as a flash at our party. Success!
On the 4th, in honor of the holiday, I made Apple Crumble (from this recipe). I was thinking apple pie/Americana (not autumn) when I made it, if you’re wondering. 🙂

Monday: Elliptical warm up, 45 minutes weight lifting/training
Tuesday: 30 Day Shred, level 3
Wednesday: 30 minutes running + 25 minutes walking on treadmill

In other news, today, like it was last week, is basically my “Friday.” The family I babysit for doesn’t need me tomorrow or Friday, so I have both days off. Unfortunately, tomorrow is also my Great Aunt Grace’s funeral. I didn’t know her too well, but based on the times I met her in person, the stories I’ve heard about her, and the Facebook contact we had (yep, an 88 year old on Facebook…love it), she seemed like such a sweet lady.
I don’t really have too much to chat about (see my post from Monday for more of that sort of thing), so I’m off! Have a great day!
