4th of July Weekend

Hello everyone!

It feels like it’s been a long time since we last talked, but at the same time, my weekend went by too so quickly.

I did a ton of fun stuff over the four day break, and have lots of pictures to prove it, so here is my 4th of July weekend in snapshots!

Thursday: a relaxing day, ending with a fire, s’mores, and fireworks. And mosquito bites.

Friday: lots of cooking in preparation for the family BBQ on Saturday, playing with Ella, and a shopping trip with mom.

Week in Review

So that was my marvelous weekend. Here are some other things I did over the week…

  • Made these adorable shirts with the kids. They were inspired by something I saw on Pinterest, and I think they turned out wonderfully!

  • Saw The Great Gatsby again with my parents and fell in love with it (the story) even more.
  • Played about 8 games of euchre, and won only one.
  • Started A Raisin in the Sun. I’ve plowed through all of the books for student teaching the 10th grade Honors class, and once I finish this one, I’ll move on to the reading for my 12th grade mythology class.
  • Watched this trailer about a million times and laughed my butt off each time.
  • Started using SparkPeople again. I think it’s safe to say my food portions have gone a bit crazy, and I’m seeing/feeling the effects. I know calorie counting isn’t for everyone, but I’m going to use it for a little while to get myself back on track.
  • Developed an egg-free frittata recipe that I am so excited to share with you all. I think I’ll save it for Meat Free Monday next week.

Before I go for the day, I have two things:

First of all, I am so sorry I have been horrible at writing back to all of your lovely comments. I hope you all can forgive me. 🙂 I am going to try my hardest to be better at that this week.

  1. No worries about replying to comments, darlin’ — I’ve been horrible about that lately, too. (Ah, if only we all had more time!) That said, your weekend sounds like it was fabulous, despite being eaten alive by mosquitoes. (Those things are the absolute worst. How do they always manage to set up a veritable buffet line on one’s limbs?!) Hope you have a wonderful Monday! 🙂

    Looks like a fabulous couple of days! The food pictures look absolutely delicious and I love the flag t-shirts….what a cute idea. Can’t wait for the egg-free frittata recipe….looks scrumptious!

  3. I cannot believe how many bug bites you got. You poor thing! I would be going nuts scratching my legs, Ha Ha!

    1. I have *never* gotten that many before! It was incredible difficult not to scratch them!

  4. Those basil/mozzarella/tomato appetizers look absolutely delicious!

    My legs looked like yours a couple weeks ago when I plated keeper at soccer. I wasn’t running so the mosquitoes went after my legs – through my socks – even though I put lots of bug spray on. The only places without bites were under my shin guards! Hope your legs are feeling better soon!

  5. Looks like a great long weekend! I LOVE your dress that’s pictured above! I’m obsessed with stripes and typically go with blue and white but am loving the grey! Also, I have to find the enjoy life seed mix! I eat way too many nuts and am really trying to cut back. Seeds on the other hand, I’m good with and I love enjoy life so I think that mix is just a win, win for me!

    1. Thanks! I love stripes, too, but I find them hard to wear. These were thin enough and a nice color to where they were flattering!
      The Enjoy Life mix is definitely a keeper!

  6. Looks like such a fun, busy weekend! I’m sorry you got so many mosquito bites :\ I would’ve gone crazy scratching if I had that many at once! I spray myself with a solution of peppermint oil in mostly water, and that seems to work to keep most of them away.
    I love the British aisle, too 🙂
    Your barbecue dishes look delish!

    1. Hmm, that peppermint oil is a good idea. I’ll have to try that next time…and I bet it smells great, too!

    Okay… So that keebler cookie s’mores sandwich is genius and looks delicious. Ah! Crazy mosquito bites! I got bit a little too but thankfully not much because I wasn’t as close to the woods. I hope you don’t itch like crazy like I do with bad bites!

    That Enjoy Life granola looks amazing. I love their products!

    Those shirts turned out great. Doing crafts is so much fun 🙂

    I just watched a whole bunch of Despicable Me 2 trailers last night as well. Always good for a laugh. The minions are just adorable!

    Good luck with the Spark People! Having a food journal can be very helpful.

    1. It seems that both of us always have so much to say on each others’ posts!
      I don’t remember who we first heard that s’mores idea from, but it is just perfect. Far less mess!
      I’m beginning to think I’m the only one (blogger) who isn’t familiar with Enjoy Life…I’ll definitely have to check out some of their other products.

    1. Mosquitos are just so awful. Thankfully my legs are almost entirely free of itch now. 😉
      I love caprese salads, too. Being able to enjoy the flavors in one bite was really great.

  19. so much marvelous, where do i begin?! that smore with a chocolate cookie instead of graham cracker = epic. i love that idea! i also think the tomato/basil/mozz skewers look to die for. i am such a sucker for that combo. the american flag shirts are adorable. heck i want to make my own!
    man those mosquito bites look brutal! i escaped with only a few really itchy bites thankfully.
    the eggless recipe totally intrigues me! can’t wait to see.

    1. That’s my new favorite way to enjoy s’mores! I love the caprese flavor combo, too. It’s so fresh and summery! Haha after I was done watching the kids do their shirts, I wanted to make one, too.

  23. I can’t believe I’m this far behind on reading your blog. Oops, sorry. This is a great recap of a really great week. That pool is incredible, and I want to go swimming in it soon (although I will be swimming in a lake very shortly, so there’s that). Your pictures of the downpour and the fire are really great, although I’m sorry about all those horrible mosquito bites. Right before you go on vacation too and are planning on showing off your legs. That’s something that would happen to me as well.
    Good luck with your calorie counting. As you know it’s not for me, but we’re all different and we need different things. You have to do what works for you.
    I’d wish you a great vacation but you’re probably already back by now…guess I’ll have to keep reading and find out just how it went. 🙂

      Yeahhhh I was pretty bummed about the bites. Thankfully they are just about gone now, and no longer itchy. I swear those little buggers knew I was going on vacation!
