A few days before my birthday (last Saturday…I know, I’m so behind on my posts!), my dad picked up a half gallon of apple cider from the local farmer’s market.
We all know that farmer’s markets have some of the best things, but this cider is truly amazing. It’s made from Honeycrisp apples and is so fruity, fragrant, and sweet.
I decided that I wanted pancakes for my birthday breakfast, but I got to thinking: how great would it be if we used this delicious cider in place of the water? And even better, what if we added fresh, tart Granny Smith apple to the batter?
And so, this recipe was born.
Whole Wheat Apple Cider Pancakes (egg, nut, and dairy free)
makes 5 or 6 pancakes
Ingredients:
– 1 Granny Smith apple, diced into very small pieces (you can leave the skin on!)
– 1/2 cup all-purpose flour
– 1/2 cup whole wheat flour
– 2 1/4 tsp. baking powder
– 1/2 tsp. salt
– 1/2 tsp. ground cinnamon
– 1 tbsp. granulated sugar
– 1 tbsp. canola oil
– 1 tbsp. applesauce
– 1/4 tsp. vanilla extract
– about 1 cup apple cider*
Directions:
- Place diced apple in a microwave-safe bowl, and microwave for about 2 minutes, or until the apple is tender.
- Meanwhile, combine all dry ingredients in a bowl (flour through sugar).
- Mix in oil, applesauce, and vanilla extract. *Then, add the cider slowly. You may need less than a cup or you may need a bit more. Just mix it in until you reach the desired, soupy consistency of pancake batter.
- Heat a griddle to medium heat, and grease with non-stick cooking spray, shortening, or butter.
- Dollop about a 1/4 cup of batter, per pancake, on the griddle.
- Sprinkle a tablespoon or so of the cooked apple pieces onto the pancake before flipping.
- Once little bubbles form in the pancake after about 2-3 minutes, flip, and cook for another 2 minutes, or until done.
- Serve warm with butter, syrup, and/or sprinkles, and enjoy!

Boy I wish I would have thought of this because we just had two big gallons of apple cider last week that my Grandpa had made from his apple trees 😦 This would have been amazing. May just have to try it out with regular apple juice.

I hope the teaching is going well. Don’t worry at all about sporadic blogging. All of us have busy times when it’s impossible to fit the blog writing in (I’m rarely posting more than once a week at the moment as life has got so busy!). The main thing is to continue enjoying the blogging and don’t ever feel bad if you miss a week or two. In the grand scheme of things, it doesn’t matter at all. Your readers (like me!) will always be here for you xx
