Hello everyone! Happy Wednesday!
I hope the week is going well for you so far and that you are enjoying some lovely weather wherever you are. It’s actually been borderline chilly here, but sunny and gorgeous otherwise. It’s really beginning to feel like summer, and I LOVE it!
I didn’t have time to do my Week in Review yesterday, and as I’m going to do it tomorrow, I might as well save the small talk for then and get right to the eats today!
Here are some of my favorites from this past week…
WIAW

Breakfasts
My breakfasts are so ordinary and repetitive that I apparently don’t even take pictures of them. Ha. But I’m definitely a creature of habit: throughout this last week I enjoyed my usual Greek yogurt bowl every morning. I just don’t have any new pictures to prove it.
Lunches
On Thursday afternoon, I had my friends Briana and Amber over for lunch. I made Pesto Chicken Rollatini and Lemon-Scented Fusilli for us all and I think it’s safe to say we all loved it. 😉
On Friday, after I spent a few hours at the high school, I met Dan at Panera for lunch. I got my usual, the BBQ Chopped Salad and it was soooo good. As usual.
Snacks
Boy oh boy have I had some delicious snacks over the last week! First up, these two amazing granolas:
Alright, everyone…confession time: my mom and I single (double?) handedly polished off that Love Crunch granola in one day. It is so good I’m actually going to advise you not to buy it lest you want it to meet the same fate as ours did. Holy wow.
The Nature’s Path granola is just lovely. It’s very light and crispy, but none of the flavors are overwhelming. Needless to say, it goes great with Greek yogurt.
(Allergy side note: I found out something interesting while reading the nutrition facts of these two granolas. Both of the ingredient lists were totally, completely fine for me – no eggs or nuts – but the “Allergy information” at the bottom claimed they contained tree nuts. It wasn’t a warning – the boxes stated they contained tree nuts. At first I was sad I couldn’t enjoy them, but then my mom realized that the companies were warning about the coconut in both snacks. I guess it makes sense, as coconut technically is a tree nut, and it’s a common allergy, but I have never before seen it listed as an allergy/contaminate. Maybe this is a new thing? Either way, it definitely was a surprise to me! Have any of you seen that before?)
Other snacks included some of the first fruit of summer!

Dinners
Sometimes, y’all, you just need pizza on a Friday night. Buttery, cheesy, delicious pizza.
And so, it happened. And I don’t feel guilty about it at all. (That in of itself is actually pretty cool.)
A meal that I have been enjoying for a few days now (I made extra so there was leftovers) is the SparkPeople Cookbook’s Slow-Cooker Salsa Chicken. Oh my goodness is this stuff amazing. I’ve been eating it for about 5 days now and I’m not tired of it.
I wasn’t kidding when I said I had been enjoying some good eats!
Desserts
Guess what?
I made Strawberry Lemon Frozen Yogurt. But I have plans for that recipe…please stay tuned!

Workouts June 2-8
Sunday: off
Monday: Kickboxing, cardio, and strength videos (Snap Fitness has a little room with some pretty awesome workout videos, and my mom and I were checking them out)
Tuesday: 25 minutes running + 35 minutes walking on treadmill
Wednesday: Core video at Snap
Thursday: rest
Friday: Yoga
Saturday: see Tuesday
Speaking of Snap Fitness, I am really impressed with it so far. My mom and I have gotten there around 6 or 7 in the morning, and there’s hardly anyone there, which is great. It smells really clean (not like a sweaty gym), and everyone there is friendly. It’s a small gym, but so far, so good!

In other news, this is my last week of “freedom”. The kids will be done with school next week, and my summer of full-time nannying will begin! I say “freedom” in a mostly joking way, as I love these kids and think I have the best job ever…but these past few weeks after school ended have been the most free I’ve had in years. All throughout college I took summer classes, and this has been the first break I’ve had in I don’t even know how long. It’s been wonderful to do what I want, when I want. But, like I said, I do love babysitting. 🙂
It’s silly, but I think the thing I’m going to miss the most when I start working full time is hanging out with this little one:

Just to let you know: Ella is high up in the competition of “cutest photobomber ever” for me :). So it’s in no way silly you feel like being able to spend time with her is one thing you’ll dearly miss working full time.
Am I weird saying that I’m a bit jealous of your nannying job? I honestly wish I knew any parents needing a nanny for their kids throughout summer – much better than my current temp job. Babysitting has always been my favourite “job” as it was basically getting paid for reading books to the little ones, playing board games and Barbie. I secretly wished the children I babysat for wouldn’t grow up ;).
One food I’d never give up is chocolate despite having overdone it a little lately. Oh, and ice cream so … when can I come over to eat frozen yogurt at your house?!
Summer is slowly starting to make an appearance around here, too, and it’s definitely made me happy. Nothing like sunshine to instantly put a huge smile on my face.

I don’t think that’s weird at all! Granted, I’m a bit biased, but I think nannying/babysitting is one of the greatest jobs ever. I’m soooo not looking forward to the day when the parent’s don’t need me because their kids are too old.
Yes, chocolate and ice cream are definitely two foods I could never give up either. And you can come over any time! 😉

It’s definitely been nice and summery here- we actually swum in waterfalls twice in the past week! Sooooo nice- I love finding free out of the way swimming holes 🙂

Watermelon reminds me of summer! I have been eating watermelon every single day for the past week, it never gets old. The best is coming in from a long hot running, going to the fridge, and just eating it out the bowl like a mad woman! Ha 😉

Sometimes you need pizza. And sometimes you also need to garlic dipping sauce to go along with said pizza (have you ever tried that stuff? I think I missing it almost more than pizza itself. lol).
Oh, you are going to have a blast with the kiddos this summer! I know what you mean about it being your last week of “freedom.” That was me the last two summers, and honestly, I kind of miss the ones that I babysat.

You know, I’ve actually never tried that dipping sauce. My family never gets it, and when I’m with my friends, I’ll go through my pizza without even thinking about the sauce. I really should try it sometime, though. Maybe with your creativity you could concoct a copycat garlic sauce?
I always end up missing the kids during the school year, so I’m looking forward to spending time with them soon!
I never get tired of salsa chicken either! It’s so versatile I find myself eating it multiple times a day!

If you had asked me about an hour ago whether or not we were enjoying summer weather, I would have said yes… but things have kind of taken a turn for the worst over the last 60 minutes, and now we’re dealing with lots of wind and rain… Ahh well 🙂
Foods that remind me of summer? Watermelon, cherries, fresh blueberries, corn on the cob, and ice cream. And speaking of ice cream, that’s definitely one food that I’d never give up.

Natures path is one of my favorite brands but I’ve never seen the coconut chia seed granola before! I have to find that ASAP
