I’m back!
I apologize again for not blogging the past week or so. My family and I went on a big trip to the southeast this past week. We flew into Washington, D.C. for the fireworks (!), then traveled around Virginia, North Carolina, and Tennessee before my mom and I drove back up to Michigan yesterday. I actually took most of last week of (Wednesday through Friday) and all of this past week off of work, so I’m technically still on vacation! Woo!
I’m really excited to share my pictures with you all, but for now, I’m going to get back in the swing of things! ๐
WIAW
Check out the theme for this month’s WIAW: fitness! I’ve basically been doing that all along, but there’s a new logo!
Breakfast
Sadly, I didn’t have any Greek yogurt in the fridge for breakfast this morning – or any granola – since we have been gone for a week. So, I made one of my protein smoothies instead!
Lunch
Caprese quinoa, inspired by those sandwiches I made for my friend’s baby shower. I wanted something GF to eat for lunch, but also something that had plenty of protein (since I ate after my workout). Quinoa fits the bill here! I just cooked some quinoa, chopped up a cheese stick and a few grape tomatoes, and added in a few teaspoons of pesto. On the side was an apple and a few unpictured handfuls of tortilla chips.
Snacks (throughout the day)
Starbucks double chocolate frappuccino.
A serving of these crackers. GF!
Dinner
A simple salad: romaine lettuce, spinach, baked chicken, cucumbers, blueberries, and dried cranberries with a drizzle of balsamic vinegar. Yum!
Dessert
Chocolate frozen yogurt with a few white and mini chocolate chips thrown in.
Workouts July 8-14
Sunday: Elliptical trainer for 40 minutes + strength and weight training (one of the biggest reasons I love staying at hotels is their mini gyms!) + hiking
Monday: White water rafting!
Tuesday: off (mom and I were on the road for 13 hours – ugh)
Wednesday: P90X – yoga
Thursday: A bike ride with the boys + 25 minutes of running intervals, 60 minutes total on treadmill
Friday: Cardio Kick class at the gym
Saturday: ??
I love love love traveling (as you know), but it is so nice to get back into my normal routine, especially when it comes to food. With allergies, eating out while traveling can be kind of difficult for a number of reasons: you can’t be positive the servers are double-checking the ingredient lists, there isn’t an option for you on the menu (this is especially bad at a breakfast place!), there are limited options per restaurant and you risk getting sick of a certain item, etc….so it’s nice to be back home where I know exactly what is in my food and where it came from. ๐
I’ll be back within the next couple of days finishing up my recap of our New England Trip, annnnd after that I’ll have plenty of photos from this past week!
