Recycling is good, right?
Well, I’m glad you agree, because that’s what all of my WIAW photos are today: recycled!
The reason why is because I stayed up at school over the weekend (whereas I usually go home) and therefore didn’t have a camera. The good news is that I ate repeats of the same meals I’ve had over the weeks, so I still have pictures to share for WIAW!

Breakfasts
Ok, so I didn’t have the fancy bowl and fruit (it was raisins), nor were the trees outside green (I WISH!), but this was what made up my delicious breakfasts: a Greek yogurt bowl!
Lunches
My lunches this past week have consisted of leftover baked ziti (see below) and these Cedar Lane organic vegetarian burritos. I’ve been enjoying an apple or two on the side of each meal, so pretend like those cherries below are apple slices. π
I don’t know what makes those burritos so good, but WOW I think I could eat them for every meal of the day and be happy! I’ll have to try and fashion my own recipe sometime…
Snacks
I was really bad and bought myself a box of Wheat Thins. Bad bad decision. Lesson learned.
Other than that, I’ve been enjoying lots of fruit and popcorn when I want something salty!
Dinners
On Sunday evening, I made a huge 9×11-inch pan full of baked ziti. It has lasted me through the week and I can honestly say I’m not tired of it yet. Success! It being the last few days of me eating meat, I decided to go with something full of beef, since that is usually (for some bizarre reason) the meat that I tend to crave, if I’m going to crave meat at all. I’ve heard things about that being my body’s way of telling me I need iron?? Either way, this stuff tasted gooooood.
The pictures are actually of another baked ziti I made a few years ago…I just found them in iPhoto and they look similar enough to what I made that it works.
Hooray for recycling!
Once I am able to get a good enough picture of the stuff (probably within the next couple of months) I’ll post the recipe for you all. It’s so simple but delicious!
Another meal that I enjoyed over the weekend was from Panera. As usual, I got their BBQ Chopped Chicken salad. SO GOOD.
Finally, I didn’t get a picture of it (bummer) but on Monday night Dan made us dinner. This is pretty big, considering he always said “he can’t cook”. He made breaded pork chops and whole wheat spaghetti with pesto and it was delicious. π
Desserts
There really wasn’t a whole lot going on in the dessert section. We got some frozen yogurt on Saturday night…
…and I’ve been enjoying some Dove dark chocolates as mini desserts.
Well, that whole recycling thing worked out better than I thought! I guess I don’t change my diet up too much…

Sunday: off
Monday: P90X Kenpo (still sore!)
Tuesday: jogging for 30 minutes (the longest I’ve ever gone!) + walking for 20 on treadmill
Wednesday: compilation of Pinterest exercises – has anyone tried my Up by 5s yet?
Thursday: rest
Friday: Yoga? 30 Day Shred?
Saturday: 35 minutes on elliptical + strength training
In other news, yesterday would have been my dog Abby’s 12th birthday.
I miss her every single day. She was the sweetest dog. I have Ella now who makes me so happy, but Ella is a firecracker lap dog (contradiction, I know) whereas Abby was a peaceful lap dog through and through. Happy Birthday, Abby!
I’m very excited to start this new pescetarian diet on Friday, but tomorrow I will be posting the Savory Apple and Onion Stuffed Pork recipe for you all. I know I said I wanted to wait until I heard back from the people hosting the competition, but…I eventually decided not to. Plus, it would seem kind of weird to post a meat recipe after starting my new challenge. π So anyway, stay tuned, it’s a good one!
Um, ok, so as you know, I despise spoilers, but did anyone watch Downton Abbey?!?!? I won’t say too much just in case some of you didn’t catch it, but I will just say this: I had the hardest time falling and staying asleep Sunday night because of what happened. Ugh. I love and hate it when a show can make me this emotional!
Do you tend to change up your diet from week to week, or do you stick with the basics?
What is one food you can’t allow yourself to buy (be it because of allergies, a diet, finances, etc.)?
Did you watch Downton Abbey? Can you stealthily and without spoiling anything for others what you thought of it?

The BBQ chicken salads from Panera are the best! Haven’t had one in forever, but I’m assuming that they’re as good as I remember.

Good for you for trying the pinterest workouts! I just seem to pin them π I try to stick to “clean eating” but of course, there are some sweet splurges π Never a true “Diet”
I try to avoid buying foods I know I love too much but aren’t good for me if I have them in the house (ice cream, sometimes jars of peanut butter find themselves finished) π
Did finish Downton Abbey and was shocked! It was sort of a problem because I watch it later in the week and accidentally saw a spoiler for it a few days ago.
Haha yeah, I have a whole bunch pinned and decided to try some instead of go out to the gym in the rain! I’m the same way, but sometimes I just have to cave in to the cravings. Oh no, what a bummer about the spoiler! I think even then the episode would have been just as emotional…
Can I have everything you ate please? First off that baked ziti is like heaven in a dish. Delicious. I love baked ziti. Cheese, sauce, pasta, and goodness. Can’t go wrong there. Those organic burritos look delicious too. Don’t even get me started on that froyo girl. You def put some sweet toppings on it.
Yes, I tend to go overboard with my fro yo toppings…and end up paying a fortune for it. π

I love a good food challenge, I usually give something up for lent despite not being religious, and I once gave up meat!
I usually try and do that too, and I thought about giving up meat, but wanted to give myself a shorter challenge I KNEW I could get through! π

I definitely have my staple foods-oatmeal, for example…I used to love almond butter until I found out I couldn’t have tree nuts. Luckily, I can still have peanut butter : )
Oh that is lucky! I can’t have any type of nut, so I go with sunflower seed butter. π
