Hello and Happy Easter! It is a gorgeous day here…a bit chilly, but sunny and spring-y!
We’re having a pretty laid-back Sunday today, so I thought I’d take some time and continue my recap of our Mexican vacation! On the third day, after lounging around the pool (and getting massages!), we decided to take a cab into the actual town of Puerto Vallarta.
It was a gorgeous day, and the ocean breeze took the edge off the humidity.
The sand sculptures were amazing!
For dinner, we went to a place called Pipi’s (actually pronounced pee-pee’s….yeah, I’m mature 😉 ) that was recommended to my parents by a couple of family friends.
They’re especially famous for their HUGE margaritas. And I do mean huge. I got a virgin margarita, and I was full from it after a couple of sips! It was very tasty though. 🙂
One of the coolest things about Pipi’s was its atmosphere. The servers all looked like they were having a great time, and there was even a mariachi band that came in and played.
They also made the guacamole to your order right in front of you. I’m not usually a fan of it, but oh man, was it good! Super spicy, though – mom told the guy making it that she liked spicy food, so he put in three tablespoons of jalapenos!
For dinner I ordered the chicken taco salad. After the margarita and chips and guacamole, I unfortunately wasn’t too hungry for them.
After Pipi’s, we headed back to the resort via cab.
Back at Vallarta Palace, we enjoyed the sunset and some desserts.
Of course, for a person with allergies, dessert is not the easiest meal to work around. They had amazing looking cheesecakes and cakes, but I decided to ask for vanilla ice cream with chocolate sauce. They were happy to oblige, and actually ended up giving me vanilla and peach ice cream with chocolate sauce.
Who would have thought that that combination would taste so amazing??? It was delicious, but I think the ice cream had egg in it, so I suffered the consequences later.
Annnnd Ian decided to sleep in the bath tub that night. What a weirdo 😉
