Happy Wednesday! I hope your week is going well!
Mine sure is! It seems like it’s just flying by (not complaining). Today was my last day in the high school. Well, the last day that I need to be in the high school. I needed to complete 30 pre-student teaching hours, and those are all done, so now going back into the high school would be by choice. While I’ll miss the students and the learning opportunity, I have to say, having those six hours back into my weekdays will be so nice. I’ll be able to get so much more done and so much more sleep! :-)
I’ve decided to do something a bit different for this week’s WIAW. If I/you like it, I’ll keep it as my regular WIAW structure, but for now, this week is the “demo” week, if you will.
I’m thinking that what I’ll do is put up pictures of foods that I’ve really enjoyed over the week, not just today. I’ll still sort them by meal, but I realized that the foods I had the most fun eating didn’t always appear on Wednesdays, so I didn’t share them with you. I know I could have lied, but…I don’t like to lie. :-)
Breakfasts (E, N)
This will be the most boring category since I tend to repeat this one breakfast that I love so much….
Yeah. Greek yogurt + granola/bran + strawberries. I think these were some of the last strawberries of the season. They weren’t great and they went bad really quickly. But mix them up with some Greek yogurt, and problem solved!
Another breakfast I had at one point within the last week was just some plain and simple toast. I used Ezekiel 4:9 bread, which has such great texture. The picture isn’t the best, but then again, we all know what toast looks like, right? ;-)
Leftovers of the quinoa dish that I mentioned last week lasted me through to Monday. As with most things like that, it just got better over time.
The picture also turned out better this time! I’ve learned that when it comes to taking pictures of food, natural lighting is the best. (That’s a problem for me, since I eat breakfast before 6:30 and dinner after sunset. Oh well.)
I also tried something new this week: Boca Burgers. While shopping the other day, I remembered that I needed to pick up something healthy/filling but quick for the days that I only have 45 minutes to prepare and eat lunch. I’d heard of Boca Burgers , but for some reason had never seen the “vegan” type before, and hadn’t ever tried them.
Well, I can tell you right off the bat that they don’t look like the picture on the box.
Oh well. I suppose it was worth a try. I’m not going to throw them out (I don’t like wasting money), so I’ll have to think of a creative way to eat them in the next few weeks.
I love me some popcorn. Especially when a box of 15 packs is less than $4. Win! They’re also marked as 94% fat free, and the sodium level isn’t too bad, considering.
I know that microwave popcorn isn’t so good for you (I just watched a segment on Dr. Oz about it Monday night and now I’m almost afraid of even going near the box) but it is so tasty. Plus, I figure I might as well snack on something that’s low calorie and has fiber to it instead of empty carbs/calories.

Heh. I realize there is often a fine line between some of my snacks and my desserts. But I’m not going to stop anytime soon, I don’t think. :-) Moving on…
I also enjoyed quite a few apples over the course of the week. I LOVE apple season!!!
Despite all that, I really actually haven’t been that snack-y this past week. (At least, not compared to how I usually am.) I think part of the reason why is because I don’t have time to be, and also because I’m putting myself on a tight budget, and should spend money on meals instead of snacks.
I ended up eating some of those quinoa leftovers for a few of the dinners this past week, but in addition to that, I enjoyed dinner at Panera:
BBQ Chopped Chicken Salad (my faaaaaaavorite) and a whole grain baguette. I love Panera. That was one of the things that I missed the most when I was in England last fall! Haha!
I also made up a Brown Rice and Tuna Casserole. It’s a take on my mom’s amazing tuna noodle casserole, only without the noodles, obviously.
Yet again, not the prettiest thing in the world, but the amount of whole grains, fiber, protein, and other nutrients is really great. I’ll have to post the recipe some time soon.
On to my favorite meal of the day (because it definitely counts as a meal in my world): desserts.
I really only have two to share with you all, but they are GOOD ones. Because I had some extra time on my hands this weekend (I usually go home over the weekends, but this time I stayed up at school and there is nothing to do here), I baked a cake!
20 oz. crushed pineapple + a box of vanilla cake mix! Remember when I made those pina colada cupcakes for my friend? This time, I left out the coconut and frosting, and voila! I let Dan take home half of it. (I would have eaten it all by myself, plus it’s fun to share!)
Crumbly, sweet, and light as air! Delicious!
The other dessert that I’m a huge fan of comes from that new frozen yogurt place just down the street from my apartment.
This time, I enjoyed cookies and cream fro-yo + raspberry sorbet. I then topped that off with sprinkles, mini chocolate chips, crushed Oreos, and hot fudge. It was seriously good.
If you’re wondering how I ate all of that, first of all, I don’t mess around with frozen yogurt, and second, I intentionally ate a very small dinner. Priorities, people! :-D
Annnnd after all of those pictures of sweets, let’s move on to the exercise!
Workouts October 7-13
Sunday: 50 minutes elliptical + 15 minutes yoga/stretching
Monday: 20 minutes jogging + 25 minutes walking on treadmill
Tuesday: circuit training
Wednesday: see Monday
Friday: P90X yoga
Saturday: elliptical + circuit training

Finally, do you remember how ages ago I told you I would put up pictures of my room? Well, here they are, for those of you who are interested!
I’m so lucky to have so much space for my room, and an en suite bathroom. I shared a bathroom with three other girls my freshman and sophomore years, and one other last year, and I’d had about enough of that! I like cleaning up after my own messes, not someone else’s! (All the moms out there are probably rolling their eyes at that statement… :-P )
